Pulse dates and walnuts in food processor until combined and sticky. Remove from container and form into a big ball. Separate into balls or logs, then roll in coconut and place prepared date rolls in refrigerator, enjoy when chilled or room temperature

1 1/4 C flour
1 Tbs baking powder
1 Tbs sugar
1/4 tsp salt

1 C milk
2 Tbs cooking oil
2 Tbs water

Mix wet and dry ingredients just until combined, and proceed to make delicious pancakes. I’ve found that even when adding ingredients (like Gummi bears, blueberries and bananas) these always turn out great. Certainly my favorite pancake recipe of all time. Usually i just add blueberries but today my son wanted to add Gummi bears, i was genuinely surprised how good they were.

Red pepper and cashew spread: pulse them together in food processor until smooth and creamy

Hemp seed Granola

Ingredients:
1 Cup Almonds
1 Cup Walnuts
1/2 Cup Hemp seeds
1/4 Cup Pumpkin seeds
1/4 Cup Pine nuts
Salt
2 Tbs Cinnamon
1/4 tsp Nutmeg
1/4 Cup Coconut oil
1/2 Cup Local honey
1 tsp Vanilla

Directions:

  1. Grind almonds and Walnuts in food processor until mostly flour like with a few larger pieces remaining
  2. Mix ground nuts with seeds and pine nuts, salt, cinnamon, and nutmeg in large bowl, make well in the center
  3. Combine wet ingredients
  4. Add wet ingredients to dry ingredients all at once, mix until well combined or is that combine until well mixed …?
  5. Dump mixture onto parchment lined baking sheet and spread into a smooth layer about 1/4 inch thick
  6. Place baking tray in preheated oven at 180f for 4 hours. My current oven is not able to go below 260f so I bake my granola for 2 hours.
  7. Cool granola to room temperature, then crumble and store in airtight container

Mashed Acorn Squash

Drizzle with local honey and a splash of whole grass fed milk

Push a tablespoon of grass fed butter into the center to melt

Your acorn squash should come out of the oven with fork tender flesh and a crispy shell

Season with salt and pepper and drizzle avocado oil (or your choice of fat) before placing flesh side up on sheet pan in 350° preheated oven for 35 minutes

Gently cut around seeds to loosen from flesh and use a spoon to scoop them out.

Ingredients:
1 cup raw almonds
1 cup raw walnuts
1/2 cup raw pine nuts
1/2 cup shredded coconut
1/4 cup chiaseeds
Pinch of salt
1/2 cup honey
1/4 cup coconut oil
1 tsp vanilla
Grind almonds and walnuts in food processor, then mix in bowl with remaining dry ingredients. Mix in wet ingredients until well combined. Spread onto parchment lined baking sheet and place in center rack of preheated oven 180°f for 4 hours or until golden brown. Get crazy with this recipe; there’s lots of room for experimentation. Just last week I made a batch that had macadamia and pistachio …. It would have been incredible with chocolate chips.

Onion mushroom bacon fritata

Ingredients:
One small onion diced
Two medium mushrooms diced
Two slices humanelyraised bacon sliced
Three pasture raised eggs scrambled
1/2 cup grass fed cheddar cheese
1 tbs olive oil
Method:
Preheat oven to 375°f. Sweat onions in small oven proof saute pan until translucent then add mushrooms and cook until moisture is released. Add bacon and cook until fat is translucent. Turn heat off and spread cooked ingredients around to simulate a pie crust, add egg into center of mixture then sprinkle cheese on top. Place pan on upper middle rack in oven and bake for 15 minutes or until eggs are cooked to your satisfaction. Remove pan from oven and slide spatula under egg to loosen from pan and serve on plate.
